ChargrillingChargrilling![]() Chargrilling on plates or pans is a healthy and flavoursome alternative to frying or grilling. Step 1: Preheat clean, dry chargrill over high heat (heavy-based, cast-iron chargrill plates and pans are best). Do not grease plate or pan as oil will burn before it's hot enough to start cooking. Step 2: Brush or spray both sides of food with oil and place on plate. Never pour oil on plate as it will collect between the ridges and burn. Avoid over-crowding - too much food will reduce the plate's temperature. Step 3: For a criss-cross effect, give food a quarter-turn halfway through the recommended cooking time. Turn food over and repeat on the other side. Step 4: If chargrilling food that's been marinated (such as meat or haloumi) or coated in sugar (mango cheeks etc), place a sheet of non-stick baking paper on the hot plate to prevent it from sticking and burning. |
