Winter Lentil Soup


Winter Lentil Soup

 

This recipe can be halved easily and also freezes well. A hearty meal on a cold winter’s night.

2 tablespoons olive oil
1 large onion
1 carrot peeled and finely chopped
¼ cup tomato paste
2 teaspoons smoked paprika
2 cloves garlic crushed
120 grams smoked kransky or choritzo sausage diced
2 1/2  litres chicken stock
2 x 400 cans crushed tomatoes
2 cups brown lentils washed
2 bay leaves
Salt and pepper
1tablespoon lemon juice
Chopped fresh coriander

Heat oil and gently fry onion and carrot until soft. Add tomato paste, garlic, paprika and diced sausage and stir over heat for another minute. Add stock, tomatoes, bay leaves and lentils. Simmer gently until lentils are very soft 1 to 1-1/2 hours. Season to taste and mix in lemon juice and coriander.
Accompany with crème fraiche or sour cream
