Quick "on the day" Christmas Cake
This cool recipe from Jacqui needs some preparation the day before, but it's so quick and easy!
3 pkts fruit (350/400g) 1 pkt almonds 250 grams butter (1 cup) 1 t/s b’carb 1 t/s mixed spice 1 tb/s golden syrup half cup brown sugar quarter cup brandy - or half cup fruit juice - or milk Vanilla essence, almond essence, cinnamon Melt butter, mix with ingredients and simmer on stove top. Sit to cool (overnight) Next day.... Heat mixture slightly 3 beaton eggs (mix through fruit mixture) Add 3 cups sifted plain flour, pinch salt, 1 t/s baking powder square tin (line with baking paper) Fill with mixture Bake at 160 cel or 325 F ( Bottom oven for 1 hour), (Middle oven for half hour ) ENJOY For 70 other recipes that are tried and true -purchase the wisanow recipe e-book |
