Good Turkey Stuffing


This is a much lighter stuffing than the traditional sausage meat in most recipes.  I get my butcher to bone the turkey and give him the stuffing to lay on the boned turkey and he then rolls it up and puts string webbing around it.  Much easier to cook and it cooks more evenly too.


Loaf of stale bread (can be white or grain)
225 grams butter
150 grams raisins
1/2 bunch parsley
1/2 packet mixed herbs
100 grams toasted pinenuts

Mix all ingredients, except pinenuts, together in kitchen whizz.  Add cracked pepper and salt, and pinenuts.  Place stuffing in Turkey cavity and cook to your favourite instructions.
