Best Oatmeal Cookies


These are so light and tasty, but beware, they can be addictive!

 
In a large bowl beat together
1 cup very soft room temperature butter and
1 cup sugar. Use a wooden spoon, no mixer.
In another bowl combine
2 cups uncooked instant oatmeal,
1 tsp baking soda,
½ teaspoon salt
1 cup all purpose flour (measure by spooning flour into 1 cup measure and leveling off)

With wooden spoon mix dry ingredients into sugar and butter mixture.
Mix in 1 teaspoon vanilla extract.
Line baking tray with paper. Shape dough into 1inch balls. Set on baking tray
2 inches apart. Dip fingers into a bowl of cool water and flatten balls to 1 inch thick.
Bake approx 20 mins at 190C until golden.
