Barbara's Easy As….. Apple Cake

 

This is simply the easiest dessert to make, looks and tastes great. When entertaining, your guests will never know you didn’t make the pastry and stew the apples yourself. Delicious!

Ingredients (for 23cm flan tin)
2 packets sweet short pastry
2 – 3 cans tinned apples (depends on depth of dish) Woolworths Select tinned apples best to use. (Can stew apples if you prefer - need 5 – 6 Granny Smiths or similar)
½ cup sultanas
Grated rind of 1 lemon
3 tablespoons brown sugar
1 teaspoon cinnamon

Use 2/3 of the pastry for the base of the tin and put the remaining 1/3 pastry in the freezer. Roll out the 2/3 pastry for the base and put in the flan tin. Mix all other ingredients together and pour over pastry base.

Take remaining pastry out of freezer and immediately grate over top of pie filling. This needs to be done quickly before the pastry warms too much as it won’t grate well.
(Optional – glaze with apricot jam)

Bake at 200C for 40 – 45 minutes.

If you don’t glaze the pie, sprinkle icing sugar over just before serving. Can be made earlier and reheated.
