Albert's Shortbread

 

My father-in-law gave me this delicious recipe for shortbread.  His grandchildren loved helping him make it and now it's my grandson licking the spoon!



Shortbread_fingers_1.jpg225 grams softened butter
1 breakfast cup icing sugar
1 breakfast cup (level) cornflour
1 breakfast cup (level) flour
1/4 teaspoon salt

Cream butter and sugar, sift in cornflour and salt and work by hand until blended.  Gradually work flour into mixture.  Be careful here as mixture can become very sticky if handled too much. If this happens add up to 1/4 cup extra flour as you are kneading.  Either roll out to 1/4 inch thickness or mould into an oblong roll and cut into slices (same as cutting bread).
Place on cold tray and bake at 175 degrees for approximately 1/2 hour.
